Quick Tuna and Lemon Rice

Ingredients:
2tbsp Olive Oil
1 onion, finely chopped
1 clove garlic, crushed
2x250g packets Coles Microwave Brown Rice
2 cups chicken stock
100g spinach leaves
3/4 cup shredded parmesan, plus 1/4 cup to serve
425g tuna chunks, drained
1 tsp lemon zest, plus extra lemon wedges to serve
Directions:
Heat oil in a medium saucepan over high heat. Add onion and garlic, cook for 1-2 minutes stirring until soft.
Add rice and stir for 1 minute to coat the rice. Gradually pour in the stock and cook for 5-10 minutes or until the rice has absorbed most of the liquid. Remove from the heat.
Reserve 1/2 cup spinach leave for the garnish, stir in remaining spinach leaves, parmesan, tuna and lemon zest. Stir until spinach leaves have wilted. Spoon into serving dishes and top with remaining spinach leaves, parmesan and lemon wedges.
